There’s a unique competition in Japan that’s reminiscent of the Westminster Dog Show, where animals are celebrated for their beauty, breeding and other attributes.
日本には、ウェストミンスター・ドッグショーを彷彿とさせるような、動物の美しさや特質等を競うユニークな大会がある。

But unlike their canine comrades, this contest is about food, these animals are cows,
しかしイヌ科の仲間たちとは異なり、このコンテストは食に関するもので、これらの動物は牛であり、

canine「イヌ科の、犬のような」。

comrade「（苦労を共にしてくれるような親しい）僚友、仲間、同志、組合員、共産党員」。

and the winning breeders get the opportunity to sell their cattle and carcasses to the best restaurants and butchers in the world at the highest price.
優勝したブリーダーは牛と食肉を世界最高のレストランや肉屋に高値で売る機会を得るのである。

carcass「（獣の）死体、（特に内臓をとった食用獣の）胴体、死体、人体、形骸、残骸、骨組み」。

This is the Japanese Wagyu Olympics, and these are high “steaks”.
これが日本の和牛オリンピック、そして高い「ステーキ」だ。

But that’s only half of the story.
だがそれは話の半分に過ぎない。

The Wagyu Olympics (formally known as Zenkyo) was launched in 1966 to help encourage a high level of cattle breeding, tourism and promote Wagyu beef in and out of the country.
和牛オリンピック（正式名称：全共）は、高いレベルの牛の飼育、観光、和牛の国内外への普及を目的として、1966年に発足した。

The competition takes place every five years and awards cattle farmers with the designation of the best beef in the world.
大会は5年に1度開催され、畜産農家に世界一の牛肉の称号を与える。

designation「指示、指定、指名、任命、選任、名称、呼称、称号」。

There are two main competitive categories:
競技部門は大きく分けて2つ、

Breed Improvement, which judges a cow on its size, proportions and other outwardly visible standards;
牛のサイズやプロポーションなど外見的な基準で審査する「品種改良」と

and Meat Quality, where the carcasses are judged on fat quality and content.
肉の脂肪の質や含有量で審査する「肉質」だ。

At the end of the competition, the best breeding cows and carcasses are sold at auction to the highest bidders in Japan.
大会終了後、優秀な繁殖牛と食肉は日本のオークションで高値で落札される。

Beef sales from the auction can run upwards of ¥72,000 (about £442).
オークションで売れた牛肉は、72,000円以上になることもある。
