先日から「The exodus of Paris’ chefs to the countryside -「パリのシェフたちの田舎への脱出」を読んでいます。

Bertrand Grébaut houses Parisians in slightly more luxe fashion at his D’Une Ile, a B&B and table d’hôte (fixed menu restaurant) in the same Perche region that also tempted Chartier from the capital.
ベルトラン・グレボーは、首都圏の大衆食堂に挑戦するようなペルシュ地方のB&B兼定食メニューのレストラン「D’Une Ile」で、パリっ子にちょっと贅沢な時間を提供する。

The Michelin-starred chef of the infamously impossible-to-book Septime in Paris’ 11th arrondissement said he wasn’t necessarily looking to create a new venture outside Paris when, in 2017, he and his business partner, Théo Pourriat, started to think about new projects to add to their portfolio.
パリ11区にあるほとんど予約不可能なレストラン「セプティム」のミシュラン星付きシェフは、2017年にビジネスパートナーのテオ・プリアと共に、新しいプロジェクトを考え始めた時、必ずしもパリ郊外でやろうとしていたわけではなかったと言う。

“It was pretty vast, at that point,” he recalled of the breadth of ideas he and Pourriat were considering.
当時考えていたアイデアは「かなり大がかりだった」と振り返る。

“But at the end of the day, we were attracted by the idea of finding a pretext to be closer to nature.
「ですが結局のところ、私たちは自然に親しむための口実を見つけるというアイデアに惹かれたのです。

pretext「口実、名目、言い訳」。

To put our feet somewhere green.”
緑豊かな場所に足を踏み入れるというね。」

Once he’d visited the B&B, the choice was made in an instant.
一旦B&Bを訪れると、その選択は一瞬にして定まった。

“It’s hard to not fall in love at first sight when you get to D’Une Ile,” said Grébaut.
「D’Une Ileに来たら、一目惚れせずにはいられない」とグレボー氏。

The irresistibly charming estate is comprised of a small grouping of 17th-Century stone buildings in the heart of Le Perche Regional Nature Park.
それはル・ペルシュ自然公園の中心に位置し、17世紀に建てられた石造りの建物が並ぶ魅力的な場所だ。

Light stone and dark wood create a peaceful, rural and rustic environment with food to match.
明るい石材と暗い木材が、穏やかで素朴な田舎の雰囲気を作り出し、出される料理ともぴったり合う。

文中に出てくるChartier（シャルティエ）は、調べたところ、恐らくパリにある大衆食堂を指していると思われます。

tempt には「挑む」という意味もあるので、そうした大衆食堂に挑戦するようなレストランを地方に作った、と解釈しました。

読んでいるだけでヨダレが出そうな、魅力的な風景と料理が浮かびます。
