BBCを英語で読む「秘密のウドン聖地」（10）

先日から「Japan’s secret udon mecca – 秘密のウドン聖地」を読んでいます。

Since some people prefer their noodles freshly boiled and refreshed rather than hot, some noodles will be served cold on premises each morning.
お客によっては熱いウドンより、冷たいものを好むため、それも店舗用に毎朝提供している。

premise「前提、根拠、(土地・付属物付きの)建物、構内、店内、既述事項」。

on premise「店舗用の、業務用の」。

Others will be sealed in individual packets to be consumed at hospitals or schools or will go on sale at local supermarkets.
また病院や学校、地元スーパー出荷用には個別包装する。

In these cases, the noodles are immediately plunged into an ice-cold water bath right after boiling. Twice.
そういったものは、麺を茹でたらすぐに冷水に突っ込む。二度ほど。

plunge「（水や場所などに急に）突っ込む、押し込む、急に下がる、落ち込む」。

As Taichi swirled the noodles in the second cold water bath, he revealed the reason:
タイチさんが二度目の冷水に麺を泳がせながら、その理由を説明してくれた：

swirl「渦を巻く、ふらふらする」。

“This double cool-down shocks the noodles to stop their cooking and to give them structural integrity.”
「この二度の急冷によって、これ以上麺が茹だるのを止め、良い状態を保つんです」。

structural integrity「構造統合性、構造保全」。

give them structural integrity（[麺に]構造保全を与える）＝「良い状態を保つ」。

As the customers stroll up to the cash box, Keiko takes the order, handles the money (the price is determined by the addition of egg or not) and calls out to her son and husband: “sho” (small) or “dai” (large).
お客がレジに現れると、ケイコさんは注文を取り代金をやり取りし（価格は卵を加えるかどうかで決まる）息子と夫に「大」か「小」か注文を伝える。

be determined by～「～によって決まる」。

Once the noodles are freshly boiled, one of the three Matsukas hands over the bowls to the customers’ outstretched hands and they then add the toppings.
麺が茹で上がれば、松家さん一家のうちの誰かがお客が伸ばした手にドンブリを渡し、あとはお客がトッピングを乗せていく。

冷たいウドンを作る工程の説明で refresh「さわやかにする、再び元気づく、新たにする」が出てきました。

ここでの refresh は「（茹でたあと）水で締める」といった意味で、なるほど、いざとなると浮かばない表現だな～と印象に残りました。

袋に入ったウドンというと、給食のソフト麺を思い出します。

あれはコシなんか皆無のふにゃふにゃ（さすがソフト麺）で、けんちん汁もミートソースもカレースープも、全部このソフト麺がお供でした。

あれはきっと松家さんからしたら、ダメダコリャ、という麺だったでしょうが（笑）、たまに無性に食べたくなります。
