先日から「How orange juice took over the breakfast table -「オレンジジュースが朝食の定番となったわけ」を読んでいます。

The US Army’s World War Two search for a form of citrus that soldiers would not surreptitiously jettison from their rations led to a research program into palatable orange juice.
第二次世界大戦中、アメリカ陸軍は、兵士が配給品からこっそり廃棄しないような柑橘類を探して、口当たりの良いオレンジジュースの研究に着手していた。

surreptitiously「内密に、不正に」。

jettison「投げ荷、放棄（物）」。

Trying to condense orange juice like milk led to memorably bad results.
オレンジジュースを牛乳のように濃縮しようとした時は、忘れられないほど酷い結果になった。

“High temperatures burned off its shine and produced a viscous and brownish mixture that lacked fresh flavor [sic],” writes Hamilton, the historian.
「高温でツヤを失い、粘性のある茶色っぽい混合物ができて、新鮮な風味に欠けた（中略）」と歴史家のハミルトンは書いている。

But evaporating some of the water under pressure, mixing a portion of fresh juice back into the concentrate, then freezing it, was more successful.
だが圧力をかけて水分を蒸発させ、濃縮液に新鮮な果汁を一部混ぜてから凍らせると良くなった。

The fresh juice rescued the funky concentrate.
フレッシュな果汁が、みじめな濃縮果汁を救ったのだ。

It produced something worth drinking, if still a far cry from the undiluted fresh version.
原液のフレッシュさにはまだ遠く及ばないが、飲み応えのあるものになっていく。

The innovation arrived as Florida growers were dealing with cyclical, massive overproduction.
この技術革新がもらされたのは、フロリダの生産者が周期的な大量生産に取り組んでいた時だった。

The promise of a new way to make juice that could be kept frozen, then reconstituted in people’s homes, prompted them into even more production, however.
しかし冷凍保存が可能で家庭で簡単に復元できる新たなジュースの製法により、さらなる増産を求められる。

They ramped up tree planting in the 1940s.
1940年代には植樹を強化。

The oranges went to frozen concentrate and eventually, to chilled juice, an industry term for the refrigerated product.
オレンジは冷凍濃縮果汁となり、やがてチルド、業界用語で冷蔵品のジュースになった。

If juice could be kept in stasis, held in waiting for a consumer’s glass, then the only problem was ramping up demand as much as possible.
もしジュースが消費者のグラスに注がれるだけ、という状態を保てるとなれば、あとは需要を可能な限り増やすことだ。

アメリカ軍は兵士の栄養補給のため、オレンジジュースを作ろうとしていたと。

柑橘類ってそのままだと食べるのが手間なので、面倒くさくてポイしてたって感じなんですかね。

当時、食うや食わずで必死に戦っていた日本軍と比べると優雅だな・・・と、妙なところで悲しくなりました・・・。

それはともかくオレンジ業界の必死の努力が行われていた時なんですね。
